Seasoned Roasted Honey Chicken

1 medium size whole chicken
1/3 cup of Ivyees floral honey
1/4 cup of chopped onion
1/3 cup of chopped scallion (green onion)
4 large garlic cloves
1-teaspoon coarse black pepper
1-teaspoon sea salt or seasoning salt
2 tablespoon of olive oil

 

Wash chicken and pat dry. Pour honey liberally inside chicken cavity; use your hand to massage in well.
Combine onions, scallion, garlic cloves, and black pepper, salt in a small bowl and mix well. Insert 1/2 of mixture into chicken cavity and again massage in well. Pour olive oil over body of chicken; rub remaining black pepper and salt over body of chicken. Cook chicken at preheated 350-degree temperature for 1 hour and 20 minutes or until it reaches 400-degree temperature. After chicken is cooked, wait 15 minutes before carving.

 

Chilled Honey Cucumber Salad

Chilled Honey Cucumber Salad

1 Medium or large Cucumber
½1/2 teaspoon sea salt
½1/2 teaspoon coarse black pepper
½1/2 teaspoon of cayenne pepper
1 tablespoon of Ivyees floral honey
1 tablespoon of whit vinegar

 

Wash cucumber thoroughly and cut in thin slices. Combine seas salt, black pepper, cayenne pepper and cucumber slices in a plastic bowl. Cover and shake well for about 30 seconds. In a small bowl mix vinegar and honey well, pour mixture over cucumber slices. Shake for an additional 30 seconds. Chill in refrigerator for 15 -20 minutes.

Great with poultry or seafood.

 

Pan Fried Fish – Ivyees Jamaican Honey, Lemon Garlic

Pan Fried Fish

Pan Fried Fish – Ivyees honey, lemon, garlic
1 TBSP Ivyees Logwood honey
1 TBSP lemon juice
1 Tbsp extra virgin olive oil
½ Tsp grated lemon rind
2 clove garlic, pressed
1 Tsp butter
1 lb fish fillets

 

In small bowl, combine honey, lemon juice, oil, lemon rid and garlic.

Heat skillet over medium heat. Melt butter in the skillet. Pat fish fillets dry. Place in skillet. Brush honey, lemon mixture over fish. Cook for 5-10 minutes on each side until the fish flakes easily with fork. Enjoy with sauté vegetable medley.

 

Salad dressing
4 Tbs Avocado Oil
4 Tbs fresh squeeze lemon or orange juice
1 Tbs Ivyees Jamaican Logwood honey. Enjoy!
